
PARSLEY DUMPLING SOUP
The Austrian classic! The dumplings are easy to prepare yourself and are full of flavor. Especially for the colder months, this recipe is a perfect warm dinner.
Ingredients
- 3 buns best from the day before
- 325 ml plantbased milk
- 1 tsp salt
- ½ tsp nutmeg
- 1 onion
- 1 bunch parsley
- 4 tbsp breadcrumbs
- 2 tbsp potato starch
- vegetable broth for 1 l
Instructions
- Chop onion and parsley and sauté together until onions become glazed.
- Chop the buns and mix with the remaining ingredients (except the vegetable broth).
- Add onions and parsley and knead well again (best with your hands).
- Form balls and let them stand in boiling water for 15 minutes.
- Boil 1l vegetable broth and serve with dumplings.
