PARSLEY DUMPLING SOUP

The Austrian classic! The dumplings are easy to prepare yourself and are full of flavor. Especially for the colder months, this recipe is a perfect warm dinner.

Ingredients
  

  • 3 buns best from the day before
  • 325 ml plantbased milk
  • 1 tsp salt
  • ½ tsp nutmeg
  • 1 onion
  • 1 bunch parsley
  • 4 tbsp breadcrumbs
  • 2 tbsp potato starch
  • vegetable broth for 1 l

Instructions
 

  • Chop onion and parsley and sauté together until onions become glazed.
  • Chop the buns and mix with the remaining ingredients (except the vegetable broth).
  • Add onions and parsley and knead well again (best with your hands).
  • Form balls and let them stand in boiling water for 15 minutes.
  • Boil 1l vegetable broth and serve with dumplings.
