VEGAN ASPARAGUS QUICHE

This recipe is perfect for asparagus season! A delicious, creamy quiche with our favorite vegetable! It can be conjured up as a snack between meals or as an appetizer.

Ingredients
  

  • 1 vegan quiche dough
  • 1 bunch green asparagus
  • 300 g vegan cream cheese
  • 1 tbsp yeast flakes
  • ½ bunch parsley
  • 1 spring onion
  • salt and pepper to taste
  • lemon zest for garnish
  • olive oil and turmeric for brush

Instructions
 

  • Roll out the base and place on a baking pan with baking paper.
  • Mix cream cheese until creamy and season with parsley, yeast flakes, salt and pepper.
  • Spread cream on the dough, leaving about 2 cm edge.
  • Fold the edges in up to the cream.
  • Place asparagus in circle shape on top of cream and press in slightly.
  • Put some lemon zest over the asparagus.
  • Mix oil with turmeric and brush the edge with it for a golden brown look.
  • Cover the baking tray with aluminum foil and bake for 20 minutes at 180 degrees Celsius.
  • Remove the aluminum foil and bake for another 15 minutes.
  • Garnish the quiche with spring onions and enjoy!
