
VEGAN ASPARAGUS QUICHE
This recipe is perfect for asparagus season! A delicious, creamy quiche with our favorite vegetable! It can be conjured up as a snack between meals or as an appetizer.
Ingredients
- 1 vegan quiche dough
- 1 bunch green asparagus
- 300 g vegan cream cheese
- 1 tbsp yeast flakes
- ½ bunch parsley
- 1 spring onion
- salt and pepper to taste
- lemon zest for garnish
- olive oil and turmeric for brush
Instructions
- Roll out the base and place on a baking pan with baking paper.
- Mix cream cheese until creamy and season with parsley, yeast flakes, salt and pepper.
- Spread cream on the dough, leaving about 2 cm edge.
- Fold the edges in up to the cream.
- Place asparagus in circle shape on top of cream and press in slightly.
- Put some lemon zest over the asparagus.
- Mix oil with turmeric and brush the edge with it for a golden brown look.
- Cover the baking tray with aluminum foil and bake for 20 minutes at 180 degrees Celsius.
- Remove the aluminum foil and bake for another 15 minutes.
- Garnish the quiche with spring onions and enjoy!
