EGGPLANT WALNUT ROLLS
These salad rolls are so easy to make and so delicious. Plus, they'll impress with their delicious appearance at any dinner. Perfect as a cold appetizer.

- 2 eggplants
- 100 g arugula
- 1 red onion
- 1 handful walnuts
- 2 tbsp olive oil
- 2 tbsp balsamic vinegar
- salt and pepper to taste
Cut the eggplants into thin slices and lay them out on a tray with baking paper.
Sprinkle with salt and pepper and pour a little olive oil over the strips.
Bake for 10-15 min at 180 degrees so that the strips become soft, but do not let them turn brown.
Put the onion and walnuts in a bowl together with the arugula salad and season with oil and balsamic vinegar, season to taste with salt and pepper.
Leave the eggplant strips to cool a little.
Place a teaspoon of the arugula salad on one slice, roll up the eggplant slice and pierce it in the middle with a toothpick.
Repeat the process with all the slices and serve.
