THIS is the ultimate weekend fuel and perfect for slow mornings. Or as we call it: throw together what you can find in your fridge!

Ingredients
  

For the scrambled tofu eggs:

  • 150 g tofu
  • 1 big tomato
  • salt, pepper and tumeric to taste

For the veggie pan:

  • 1 big potato
  • 1 green pepper
  • 1 red onion
  • vegan bacon or smoked tofu

Instructions
 

  • Fry the tomatoes, crumble the tofu and add it. Season to taste.
  • Sauté the veggies well and fry over medium heat until the potatoes are cooked. Season to taste with salt and pepper.
  • Toast 2 buns and serve with veggies & tofu. Enjoy!
