
COUNTRY BRUNCH
THIS is the ultimate weekend fuel and perfect for slow mornings. Or as we call it: throw together what you can find in your fridge!
Ingredients
For the scrambled tofu eggs:
- 150 g tofu
- 1 big tomato
- salt, pepper and tumeric to taste
For the veggie pan:
- 1 big potato
- 1 green pepper
- 1 red onion
- vegan bacon or smoked tofu
Instructions
- Fry the tomatoes, crumble the tofu and add it. Season to taste.
- Sauté the veggies well and fry over medium heat until the potatoes are cooked. Season to taste with salt and pepper.
- Toast 2 buns and serve with veggies & tofu. Enjoy!
