
ITALIAN PESTO POTATO SALAD
This salad is so delicious and full of healthy ingredients! Thanks to the potatoes, this side dish is all you need for your next barbecue. For that extra Italian flavor, you can easily make your own pesto.
Ingredients
- 500 g potatoes
- 200 g cherry tomatoes
- 200 g vegan mozzarella
- 100 g arugula
- salt and pepper to taste
For the pesto:
- 50 g pine nuts
- 10 g chopped almonds
- 25 g basil
- 3 tbsp olive oil
- 2 tsp yeast flakes
- salt and pepper to taste
Instructions
- For the pesto, put all ingredients in a blender and puree well.
- Cut the potatoes into cubes and cook until al dente.
- Cut the tomatoes and mozzarella into small pieces.
- Mix everything together, add arugula and mix with the pesto.
- Season with salt and pepper and enjoy!
