
VEGAN GERMAN POTATO SALAD
This dish is a childhood memory. We made a vegan version of the famous German potato salad – and a healthy one! We are eating this salad on repeat lately, so we hope you love it as much as we do.
Ingredients
- 1 kg potatoes
- 1 avocado replaces the egg
- 150-200 g chopped pickles
For the dressing:
- 500 g plant based plain yogurt without sugar we used soy yogurt
- 2-3 tbsp pickles water
- 2 tsp mustard
- 2 tbsp vegan mayo
- 1 tbsp vinegar
- salt and pepper to taste
Instructions
- Peel and cut the potatoes into small cubes and cook until smooth.
- Chop the avocado and pickles and add to a bowl.
- Rinse the cooked potatoes with cold water and also add to the bowl.
- Mix all ingredients for the dressing and stir well.
- Pour over the salad and mix well. Enjoooooy!
