VEGAN GERMAN POTATO SALAD

This dish is a childhood memory. We made a vegan version of the famous German potato salad – and a healthy one! We are eating this salad on repeat lately, so we hope you love it as much as we do.

Ingredients
  

  • 1 kg potatoes
  • 1 avocado replaces the egg
  • 150-200 g chopped pickles

For the dressing:

  • 500 g plant based plain yogurt without sugar we used soy yogurt
  • 2-3 tbsp pickles water
  • 2 tsp mustard
  • 2 tbsp vegan mayo
  • 1 tbsp vinegar
  • salt and pepper to taste

Instructions
 

  • Peel and cut the potatoes into small cubes and cook until smooth.
  • Chop the avocado and pickles and add to a bowl.
  • Rinse the cooked potatoes with cold water and also add to the bowl.
  • Mix all ingredients for the dressing and stir well.
  • Pour over the salad and mix well. Enjoooooy!
