APPLE-RHUBARB-PLUM CRUMBLE WITH ICE CREAM

Ingredients
  

For the fruit mix:

  • 3 sticks rhubarb
  • 2 apples
  • 6 plums
  • 5 tbsp brown sugar or agave syrup
  • 5 tbsp spelt flour or starch
  • 1 tsp cinnamon
  • 1 tsp vanilla sugar

For the crumble:

  • 200 g spelt flour
  • 50 g brown sugar
  • 2 tsp baking powder
  • 40 g coconut oil or vegan melted margarine
  • 2 tsp vanilla sugar

Instructions
 

  • Cut the rhubarb, apples and plums into pieces and place in a large bowl.
  • Add sugar (or agave syrup), cinnamon, cornstarch (or flour) and vanilla extract to the fruit, mix well and let sit for a while.
  • For the crumble, put all ingredients in a bowl and knead lightly with your hands until crumbles form.
  • Put the fruit in a baking dish, spread the crumble on top and bake in the oven for 40 minutes on the middle shelf at 180 degrees.
  • Pour vegan ice cream on top and enjoy.
