
APRICOT-AVOCADO TOAST
This delicious and healthy toast is the perfect summer snack! Easy to make and full of flavor and vitamins.
Ingredients
- 1 slice bread of choice
- 3 apricots
- ½ avocado
- 1 spring onion
- 1 handful arugula
- walnut oil
- agave syrup
- salt and pepper to taste
Instructions
- Cut apricots into small pieces and fry until soft.
- Dice avocado and mix with apricots in a bowl.
- Season with walnut oil, agave syrup, salt and pepper.
- Toast bread and top with arugula.
- Place apricot-avocado mix on arugula and garnish with spring onion.
