
COUSCOUS BROCCOLI PANCAKES
These pancakes are perfect to make a delicious midday snack! Filled with lettuce and a delicious sauce, you have everything you need for a rich meal.
Ingredients
- 125 g flour we used spelt flour
- 125 ml soy drink without sugar
- 125 ml sparkling water
- 1 tsp pure tartar baking powder
- 45 g couscous
- 2 large broccoli florets
Instructions
- Mix all ingredients (except couscous and broccoli) until smooth.
- Prepare the couscous according to instructions and chop the broccoli florets very finely.
- Mix both into the batter and mix well.
- Pour one ladle of batter for each pancake into a coated hot skillet and bake on both sides.
- Garnish to taste and enjoy!
