VEGAN PARMIGIANA DE MELANZANE

Ingredients
  

  • 2 eggplants
  • 500 ml strained tomatoes
  • Italian herbs
  • vegan grated cheese

Instructions
 

  • Slice the eggplants lengthwise.
  • Season the strained tomatoes with Italian herbs to taste.
  • In a baking dish, alternate strained tomatoes and eggplant slices, starting and ending with strained tomatoes.
  • Garnish with grated cheese and put some cheese between the eggplant slices if needed. Then it will be creamier!
  • Best to let stand overnight in the refrigerator, but you can also prepare it directly.
  • Bake at 180 degrees for 30 min and enjoy!
