
CREAMY AUTUMN SOUP
With vegan bacon, creme fraiche and a looooooot of veggies!
Ingredients
- 1 kg potatoes
- 1 leek
- 1 celery bulb
- 4 carrots
- 1 onion
- 1 bunch parsley
- 700 ml veggie broth
- vegan bacon we use vivera
- creme fraiche for ganish
- salt, pepper and nutmeg to taste
Instructions
- Peel and chop the vegetables and fry them in a pot.
- Deglaze with vegetable broth and cook until everything is done.
- Then puree and season with salt, pepper and nutmeg.
- If necessary, add a little water if it is too thick.
- Serve with vegan bacon and creme fraiche!
