NO BAKE LOTUS CHEESECAKE

This simple cake enchants everyone! It is simple to prepare and a real explosion of flavor! You can not get enough of this.

Ingredients
  

For the base:

  • 250 g Biscoff cookies
  • 90 g vegan margarine

For the cheesecake filling:

  • 250 ml plantbased milk
  • 1 ½ tbsp starch
  • 1 ½ tbsp sugar
  • 50 g vegan margarine
  • 225 g vegan cream cheese
  • 2 tbsp Biscoff spread
  • 50 g icing sugar

For the topping:

  • 3 tbsp Biscoff spread

Instructions
 

  • Crumble lotus cookies and mix with melted margarine.
  • Spread cookie mixture in a small, round springform pan.
  • Bring milk, starch and sugar to a boil in a saucepan, stirring constantly, until a thick cream forms.
  • As soon as it thickens, remove the saucepan from the heat, stir in the margarine and melt it.
  • In another bowl, mix cream cheese, powdered sugar and melted lotus cream.
  • Then fold in the milk cream.
  • Pour the cream cheese filling on the base and finally cover with the melted lotus cream.
  • Refrigerate for 3 hours (preferably overnight) and enjoy.
