
NO BAKE LOTUS CHEESECAKE
This simple cake enchants everyone! It is simple to prepare and a real explosion of flavor! You can not get enough of this.
Ingredients
For the base:
- 250 g Biscoff cookies
- 90 g vegan margarine
For the cheesecake filling:
- 250 ml plantbased milk
- 1 ½ tbsp starch
- 1 ½ tbsp sugar
- 50 g vegan margarine
- 225 g vegan cream cheese
- 2 tbsp Biscoff spread
- 50 g icing sugar
For the topping:
- 3 tbsp Biscoff spread
Instructions
- Crumble lotus cookies and mix with melted margarine.
- Spread cookie mixture in a small, round springform pan.
- Bring milk, starch and sugar to a boil in a saucepan, stirring constantly, until a thick cream forms.
- As soon as it thickens, remove the saucepan from the heat, stir in the margarine and melt it.
- In another bowl, mix cream cheese, powdered sugar and melted lotus cream.
- Then fold in the milk cream.
- Pour the cream cheese filling on the base and finally cover with the melted lotus cream.
- Refrigerate for 3 hours (preferably overnight) and enjoy.
