
RISONI SUMMER SALAD
During summer we could live on salads every evening! Goes fast, is not too warm and tastes just good! This Greek Style Risoni salad is our new favorite!
Ingredients
- 500 g risoni
- 150 g olives
- 1 cucumber
- 1 handful cherry tomatoes
- 1 vegan feta cheese
For the dressing:
- ½ cup vegan natural yogurt
- 1 tbsp mustard
- 3 tsp olive oil
- 1 lemon juice
- salt, pepper and chili flakes to taste
Instructions
- Boil the pasta, chop the vegetables and feta and mix together once the pasta is cooked.
- Then let it sit for a few minutes, then the feta flavor will blend nicely into the pasta.
- Mix the dressing and add to the salad before serving and mix well. Bon appetite!
