WILDBERRY CHEESECAKE QUICHE

So simple & delicious! For the dough we have taken the round Tante Fanny quiche dough. It's vegan and tastes so good! (Not sponsored, bought myself)

Ingredients
  

  • 1 vegan, round quiche dough

For the filling:

  • 1 kg vegan skyr yogurt
  • 150 g sugar
  • 1 lemon zest
  • 1 pack vanilla pudding powder
  • 125 g vegan butter melted

For the topping:

  • 200 g frozen berries
  • ½ cup water
  • 2 tbsp starch
  • 1 splash agave syrup

Instructions
 

  • For the filling, mix all the ingredients together and stir until smooth.
  • Pour the dough into the baking pan and press up the edges.
  • Pour the filling into the mold and smooth it out.
  • Bake at 180 degrees top/bottom heat for 60 minutes and then let cool slightly.
  • Mix the water with the cornflour and bring to the boil with the berries.
  • When slightly cooled, pour over the cake and place in the refrigerator for 20 minutes before serving.
